Cheddar Meatloaf

INGREDIENTS:
1 cup shredded Adams Reserve Cheddar
3/4 cup crushed crackers (cheese flavored)
1 small chopped onion
2 tablespoons minced red pepper
1/2 cup ketchup
1/4 cup milk
2 eggs, beaten slightly
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 pounds lean ground beef

DIRECTIONS:
In a large bowl, combine cracker crumbs, onion, pepper, ketchup, milk, eggs, salt, pepper, ground beef and cheese. Form into a 6 or 7 inch round loaf. Press mixture into a loaf pan. Preheat oven to 350º. Bake approximately 2 hours. Cool for 10 minutes before slicing.
